Kumo Counter is twelve seats at a hinoki bar plus a handful of booths behind a noren curtain. Kenji Watanabe cuts fish in view and keeps a small ramen pot for people who came hungry rather than ceremonial. The sake list is short and cold, the lighting is low, and walk-ins rarely land a counter seat after 7. It is the opposite of a conveyor-belt lunch rush.
