Brick Oven Brothers is a Bryant family pizzeria where the oven glow is the lighting plan. Tony Russo and his brother still stretch dough by hand and run a pepperoni pie that blisters at the edges. Soccer teams take over the back room on Saturdays; weeknights are date slices and garlic knots. Fountain drinks are giant, and nobody pretends this is Neapolitan theater.
